Pumpkin Spice Hot Cereal

I was a huge hot cereal eater back in the day–especially Cream of Wheat.  When I was deployed I carried instant oatmeal packets with me everywhere because they were so easy to heat up with a little water while I was traveling and in college I’d hole up in my room to study with a hot bowl of oats, apples, and peanut butter.Most Paleo hot cereals are just ground nuts and mashed bananas, but I threw together this concoction last night and took it in this morning to heat up for breakfast.  So, so good…it’s almost souffle-like in texture and tastes like pumpkin pie but really sticks to your ribs.

Makes enough for one:

1/4 c Pecans
3 T Flax Meal
1 c Pumpkin puree
1 Egg
2 T Almond Milk
1/2 t Cinnamon
Pinch each of Nutmeg, Cloves, and Ginger
Pinch Sea Salt

Combine all ingredients in a food processor and pulse until well blended.  Microwave about 3 minutes or until heated through.  Top with anything that sounds good…I had fresh cranberries on mine this morning but raisins, a scoop of nut butter, or some coconut milk would have been amazing, too.

  1. This has become one of my go-to breakfasts. I don’t even add whole nuts. I have nut meal/flour ready. Then in the morning, I can just mix everything in one bowl, microwave, and I’m good to go. Thanks for the great idea!
